This is an awesome and healthy breakfast that can be made quickly. Fast, healthy food=the best kind of food in my book. The sweet potato hash can be prepped and stored in the fridge, so you’re just left heating up the hash and spinach and frying an egg!
- Two sweet potatoes
- One yellow onion
- One tablespoon of extra virgin olive oil, butter, or fat of choice (ghee, coconut oil, etc.)
- Spinach (fresh or frozen…I prefer the frozen cubes of spinach because they’re simple to heat up in the microwave)
- Eggs (amount dependent on how hungry you are 🙂
- Salt and pepper to taste
Peel and dice the sweet potatoes and onion. Add olive oil, butter or fat of choice to a frying pan on medium heat and then add sweet potatoes, onion and salt and pepper (optional). Let cook for approximately 25 minutes, stirring occasionally. Prepare your spinach. If you have frozen spinach cubes, they can be put in the microwave for one minute. If you have fresh spinach, add to a frying pan with a teaspoon of extra virgin olive oil and cook until wilted. Turn spinach and sweet potato hash down to low while you cook your eggs. You can fry, cook over easy or even scramble…be creative! Combine all ingredients and add salt and pepper to taste if you’d like. Voila! Simple and healthy breakfast. Like mentioned before, the sweet potato and onions can be stored in the refrigerator so that you can make the breakfast again more quickly another day.
