Rice Noodles with Sweet Ginger & Scallion Sauce
I found this recipe on Pinterest from food.com when I was trying to find something to pair with Sesame Chicken. I used to love lo-mein so I wanted to make some kind of noodle. I couldn’t find gluten free soba noodles in the store, so I used thick rice noodles and they were awesome! I’m also ashamed to say it was my first time trying rice noodles…but then I made this dish three times in the same week sooooo obviously they’re great. And this recipe is SO easy to make. The sauce you put together just needs to sit for about 10-15 minutes (or however long you want) and you just need to cook the rice noodles. THAT’S IT!
The recipe can be found here . I used sesame oil instead of grapeseed, used organic blue agave instead of honey, skipped the cucumber, and didn’t toast the sesame seeds to save time. The lime at the end was a great finishing touch too!
